For those celebrating the festival of Shavout next week, here is a recipe for the best cheesecake ever!

5 large eggs
1 cup sugar
1 kg ricotta/low fat Philadelphia cheese
1 small sour cream
4 full tbs cornflour
5 full tbs vanilla pudding

Heat oven to 180 and put a small dish with boiling water at the base of the oven.
Beat egg whites with sugar until glossy
Beat egg yolks with cream and cheese until totally smooth, then add flour and pudding.
combine both dishes.
Pour into 26cm ring baking dish.
Bake for 10 mins, then reduce heat to 150 and continue baking for another 50 mins. Turn oven off and leave cake for another hour before opening the?door. Let cake cool totally.
If needed cover with bulla cream beaten with 2 tbs?vanilla pudding.
